- 400g lean beef, cut into 2cm pieces
- 5 cups chopped mixed vegetables
- 2 cups cooked rice
- 1/3 cup low-fat yoghurt

- 200g snow peas, steamed

Ingredients
- 3/4 cup reduced-fat plain yoghurt
- 1/3 cup chopped fresh mint or coriander
- 400g lean lamb leg steaks
- 1 tablespoon Moroccan spice
- 3 zucchini, sliced
- 3 slender eggplants, sliced
- 250g punnet cherry tomatoes, halved
- 2 cups prepared couscous

Tips
- You can use cucumber yoghurt as an alternative to herb yoghurt.
- Use lamb chops, removing all visible fat before cooking.
- Add sweet potato and beans instead of the lamb for a vegetarian alternative.
